the difference in parry between a one handed and a two-handed weapon- 5%- is it worth it? Or do most carry one-handed weapons for the ability to chug potions or throw suriken?

carebear shards its good to use the 2h wep, though here pots are just too darn useful compared to 5% more avoidance

that aside there are ways to make macros to chug while using the 2her, and if you have KR you can easily make a macro to switch from 2h to 1h, chug and switch back to the 2her, but then you need to carry 2 weps anyway so *shrug*
