I have GM poisoning, but my ninja shuriken only DP. If my ninjitsu is high enough is there a chance for it to get bumped to lethal?

Nope....
Shuirkens and Darts are based off Ninja skill and they never bump to lethal. The only way to get Lvl 5 / Lethal poison is the special - Infectious Strike.
The exception being Evil Omen. If you hit them with Evil Omen first and the shuriken hits, it should be at Lvl 5.
