There's not much you can really do with large towers. Thy are already four stories high. You can add walls to the top floor, but I don't think you can go any higher. Inside, you could only divide rooms.

In theory, you can add a roof to a tower - I've done it. It will stay as long as it's around 74/75 on the Z axis.

I don't have a keep, but I played around with one a bit on Test Center when the walls first came out.

Here's what I did on the roof, and below it the doors I put on the floor below, and the doorway I 'bricked up'. The doors were set with different access, so one part of the keep was public, another was friends access and one bit was private.
