Ok Second floor,
This is where it gets a bit different:

What I'd do is put a wall along the south since that you really can't see or use much back there anyway. I'd separate those two rooms with a wall in the center then I'd put double doors in all round but leave the center space somewhat open. This gives WAY more privacy allowing area's of your home to be put "off limits"..... while allowing access to much of the rest.

Ok and finally Roof Easy part just eliminate or move some of the wall at the top move it back along the new back wall put down roofing same tiles as before open up the 2 back towers to the current roof... Eliminating the need for dozens of ladders and making it larger and more useful.... but yet keeping the "keep" feel.
