You can't add any Abilities (other than Poisoning) to the Saurosaurus anymore (not since TC). You can up the Stats, Regens, Resists and Skill Caps.
I have my Saurosaurus at 819 Health/150 Stamina/429 Mana, 690 STR/150 DEX/429 INT, 20 HPR/30 SR/30 MR, 85/90/65/45/80, 24-33 Base Damage, 120 Wrest/120 Tact/120 Resist/120 Anat/120 Parry/120 Med/120 Focus. Tanks like a baws.
