With imbuing and the forge tool, the de facto skill cap is much higher than 720. I would argue that templates with 820 should be viewed as easily obtainable. Further these builds are generally hybrid builds that are casters and melee/archer/throwers, hence this topic would be at home in both the warrior and spellcaster forums.
This is how I play UO, I try to figure out interesting ways to combine skills to maximize effectiveness and enjoyment of a particular character. I am inherently lazy so relying on consumables lowers the enjoyment value of a build for me. This means I don't use skills that require reagents without 100% LRC and only carry a couple potions. My main character has always been a dexxer, I never played a mage until I discovered mageweapons.
Lynk showed me the light on what is possible by suggesting a build that was my main character plus bushido, for a total of 865 skill points.
120 Swords
90 Tactics
115 Bushido (thanks Lynk!)

100 Hiding
120 Mysticism

865 Total Skill. Mage Stats. I've toyed with the idea of changing this build from human to gargoyle and replacing swords with throwing.
Another template that I created is a mage dexxer, using a mage weapon to attack as often as magery spells
120 Magery (+20 skill for 1-handed mage weapon)
120 Eval
100 Med
100 Anatomy (instead of tactics for a melee damage bonus plus defensive wrestle when holding a spellbook or disarmed)
80 Poisoning (DP fields, poison resist)
120 Bushido
120 Parry
50 Weapon Skill (same as mage weapon)
830 Total Skill. Hybrid Stats (i.e. 80 Dex)
Similar to that build though decidedly more of a spell caster is:
120 Magery (+20 skill for 1-handed mage weapon)
