I would think so. Eaters shouldn't make a distinction between the damage a monster hits you with, just as you'd see different eaters triggered when the same monster hits you with fireballs versus e-bolts.
Normally, I hate saying such, because I don't want to see it nerfed. But, the new shadowlord is 20 in all damage types. So, having multiple eaters seems like it would be pretty effective if it works this way.
Because that will only trigger once. If you have different eaters, each would individually trigger. At least in theory, an all eater doesn't care about the type.
Plus... there is a shield which has several eaters and there was a time when you could make eaters that didn't count against the imbuing weight.

30% Fire Eater Basically gives you back 30 Life..
Spit that 100 Base dmg into the 5 different damage types physical / fire / cold / poison / energy... = 20 dmg per Type....
If you had 30% Eater in EACH respective Type of the 5 types.... thats 30% of 20 = 6 Damage "Eaten" for each of the 5 types aka 30 Dmg.....
It doesn't matter how you break the dmg up with percentages etc.. (%).... I'd say the EASY way to do it is 18% Damage Eater All.. bc that's 18% of EVERYTHING... but the Wall of Hungry Mouth's isn't bad either..
