Just picked up 7 and 8 a few hours ago (along with NOX and Lands of Lore 1 and 2). I love GoG, it's a great site.

It's funny, I've never played an ultima game other than UO. But it will probably be awhile before I get to them, I haven't replayed through all the old d&d games I got on GoG last month.

7 is considered the pinnacle of Ultima for many, and even people who aren't fans of ultima in general typically enjoy the story and feel of the game. Excellent choice ^ ^.

Just downloaded Ultima 7 and can't wait to play. Are there any good mods to make the graphics look better?

When you get U7, make sure you download Exult to run it. It doesn't upgrade the graphics, however it DOES upgrade the functionality of the game by making it able to run in Windows, you can run at a higher resolution or simply with a larger game screen showing more of the map. There is also an addon that's more or less in beta that will rotate the U7 graphics by 45 degrees making it a lot like UO, however, running a large gameplay window with the rotated graphics WILL cause a good bit of lag and might make it unplayable.
