you have to be either guilded, or unguilded. I forget which.

dunno about disguise kits, i never use them.

I trained stealing recently, really easy.

I was not guilded, in trammel, on a ship, stealing items (of the correct weigth) from the hatch. I had a couple of hired NPCs there to watch me.
You have to have NPCs (or players) watching you steal in order to gain.

Oh, and using the stealing skill always reveals you.

I think a disguise lasts for 2 hours. Be aware though, you can not change into any forms while in disguise.

I stealth and hide next to my horse that is guarding me, but every time i try to steal from the container, it blocks my attempt and breaks my hide.

This is one of 2things, either your pet isnt guarding you while guilded in trammel or your out of line of sight (oh make sure your guarded in fel or get g-whacked)

Also, how long in real time do disguise kits work?

Either 1-2hours (pretty sure its 1hour) this is actual game time logged on that char, also note, no forms can be taken while disguised. All macros will be lost and numerous other things which in essence make them pointless.

If you're hidden and you use stealing, yes it does.

Very curious as well. Because if you're hidden, the second you use the skill to bring up the targeting cursor, you're automatically revealed.
