I have 150 dex and 159 stamina, and when I drink a Greater Agility potion - with 50% enhance pots - it stays absolutely the same. Is it normal? Am I hitting a cap or something?

Case in point for you, you can have more stamina but...you won't have more than 150 Dexterity. That's life.
Like I said...you can have as much stamina as you want. Greater agility potions are generally made of better use by a mage than a dexxer. If you already have 150 stamina...you really aren't doing a whole lot anyways by using them.That's fine with me - but this is blatantly wrong then:

And greater agility potions are completely useless if you are above 120 or so, then?
