Looking for a swift response please (Parrying newb)

I haven't trained Parry in about two years. And I haven't been playing that long after a break.

I am at the animal pens and I have sheep there. I target double click them in combat and when they get close they hit me maybe three or four times, and then walk away. I am tabbing out when they start to hit me, if I don't I one shot them. How do I keep them attacking me?

They will walk away if they cant hit you for awhile, meaning you have surrounded yourself, and the ones that cannot hit you will eventually lose aggro.

It's two sheep. lol

Ya just two, and they hit me like maybe 3 times and then walk away.

*edit* Seemed to only happen at Jhelom pens. I am getting attacked everywhere else. Weird....

Best way i've found to train Parry from 0.0 - 120.0, is to get a suit with 18 HP Regen on it, soulstone a skill, buy Necro up to 30.0, throw on some +Necro Jewelry, transform into a Moloch (Horrific Beast) and have a bunch of Gamans attack you. If you have Bushido, equip a 2 handed wep that you have no wep skill in, if you don't have Bushido, just equip a high Durability/Self Repair shield with no wep equipped. Parry gains skyrocket then.

I am at 99 Necro (using Horrific Beast) with a Bracelet of Health and a Totem of the Void on. I have Bushido at 70 currently so I am using a Dull Copper shields. So far with three sheep beating on me, I am up to 98.0 skill. If it slows considerably, I will find more fluffies to attack me.

go to the fighter pits in Jelholm with your shield and target a couple of the dudes there. Parry gains will go up fast, and if your using it, the healing gains by X-healing the blue NPC there and yourself will help too.

If you have Bushido, you equip a 1 handed wep you have no skill in and a shield. If you don't have Bushido you equip a 2 handed wep you have no skill in. The way you have it is incorrect.
Last i checked (Haven't been on much in the past year), past 30.0 Parry, you only gain skill when you actually Parry. Samurais have practically no chance to parry with a Shield, and have a higher chance to parry with a 2 hander than a 1 hander.
Non-Samurais have a lower chance to parry with just a wep than they do with a Shield.
With 120.0 Bushido/120.0 Parry/100+ DEX, my Samurai/Swordsman has 40% Parry chance with 2 Hander, 35% Parry chance with 1 hander, 5% Parry chance with Shield.

To be able to X-Heal the hirelings, you have to damage them, and they die in 1 hit most of the time now, even with NPC bought weps. Gamans work a bit better since they attack fast and don't hit very hard. With enough of them on you, even with 18 HP Regen+Moloch Form, you will need to bandy yourself. Parry skyrocketed fast from 100.0 - 120.0 when i used about 7-9 Gamans.
