is there a technique or trick to just sticking vines on regular walls on the inside? I'm having the damndest time just trying to get them to the wall

Try placing a trash barrel by the wall, put the vines inside, then axe it. You can also do it with small containers like wooden boxes, but it's a little easier with a trash barrel esp if you have a macro (or you can just hit ctrl +Q to repeat the last thing you said).
