I guess I'm doing it so I can catch all the different types of fish. I'd also like to get the title of Legendary Fisherman; I don't think there will be very many around if the level of difficulty for maintaining powerscrolls is maintained.
I don't think that fishing will be a great way to generate income. Now, I do know that you can probably make some money supplying fish to those training fishing (same as with other professions), but that doesn't require 120 fishing. Some of the rarest fish might prove to be valuable in fish pies, but I think the money in that is limited. And I don't think people will be too interested in buying big rare fish for deco with another fisherman's name on it. There's definitely some money to be made in selling fishing PS right now if you can get them.
But really, if you think about it, most crafting/trade professions are not worth the cost & effort purely from a monetary standpoint. I don't think you'll make back the cost of ingots, leather or lumber spent in training smithing, carpentry, fletching or tailoring. Now, in conjunction with imbuing or if you use your skill to do BODs you can have a really good business, but I don't think anyone makes enough selling plain armor or bows to make up the cost of materials needed for training (and for those who say they get all their own materials, then the value they lost by using instead of selling the raw materials).
So no, I don't think training fishing is about money; but many people who fish in RL blow tons with little hope for recouping as well. It's a hobby. I'd like to be able to catch rare fish, and get some nice trophies with my name on it. If 120 fishing helps with that (and I'm pretty sure a few of the fish will be available to 120 only), then that deco would be worth it to me. Worth nothing if I tried to sell it, but to show off in my own house I'd enjoy that more than something I went out and paid 50m for.
