I'm trying to figure out which would help block or dodge more for a mage, having Anatomy + Eval or Wrestling + Eval.

120 eval + 100 anat =120 wrestle defense.. so the only real advantage to doing anat over wrestle is the 20 skill points. If you have the extra 20 points it's worthwhile to be able to disarm.
Usually an anat/eval toon has a tight template with low med, so that 20 points is a pretty big deal.

If this is a PVP template *Disarm* is too valuable to give up for 20 skill points.
Bump your mana regen up with items and drop med slightly if you can't find the points elsewhere.
