I would like to know what the difference between these skill at 100 and the skills at 120? Is 120 in all these skills a must have or can you get the same for less skill point allocated to these skill? Basically whats the best bang for my buck as far as these skills are concerned?

I stopped taming at 100 (too slow for me) and carry ring and bracelet sets to make up the difference.

Yeah, what GFY said.

Should be fine with 100 in all three, buy yourself 110 scrolls, and use jewels to get them up to 110.

I've got 110 real in Lore & Vet, and 105 real in Taming. But I only have my caps at 110. My jewels give me +10 taming and +10 lore but they are almost useless now that I have raised them to 110 real skill. Okay I could try getting 120 scrolls, but they are horrendously expensive (imho) and for that reason going above 110 isn't really worth it.

The only time 120's would be useful is when taming the top-end pets (hiryu, Cu, firesteed, etc) but tbh you can still tame these with 110's (by that I mean 100s jewelled up to 110s), it will just take a bit longer and be a bit tougher. But how often do you really tame high-end pets? Probably not enough to warrant the expense and timesink raising those skills... you also get better control, but again imho the small increase is not worth the expense & effort.

I'm 120 vet 110 lore and 110 taming, I jewel up to 120 in all 3 to get the 6 extra stable slots. If it were not for the extra stable slots I wouldn't have gone over 100 in each personally.

I'm going to 120 in all three on my main tamer just because I can and want to. But as others have pointed out the only reason to go above 110 really is for the extra stable slots. Unless you want a Fire Steed you will need 112 in taming with lore at 110 to have 99% control. Now 120 taming has it's benefit of being able to tame the high end pets eaiser such as the Cu Sidhe. Scroll prices are comming down the last ones I purchased were 120 tame 4mil, lore 2 mil, and vet 1 mil. It's just a matter of looking for the good deals and not paying the exorbitant Luna prices.

So basically with

Taming - 120
A Lore - 110 (100 If I only want to lore anything that can be tamed)
Vet - 100

I will sacrafice some healing and 3 stable slots (max 11 stable slots). Other then that I can do anything a 120/120/120 can do?

120 Lore/120 Vet = Heals for 51-94
110 Lore/100 Vet = Heals for 45-82
100 Lore/100 Vet = Heals for 43-80

Is this correct? Am I missing anything?

I'm not including rings and bracelets to keep my facts straight. I can add those later.

Firstly, a word of caution about jewellery. Always try to ensure you have at least some control without it. Otherwise if you die and forget to put on a jewel after resurrection, you may end up with a very p'd off pet. Often you want that pet to look after your newly-res'd butt, so it's a good idea to ensure he will obey
Sod's law of pet control = when it most counts, the RNG will fail a pet command... So use it with care

Taming is a git to gain past 100, so you won't likely pass 110 for a while anyway. Personally I see no reason to do more than train real skill to 110 and use jewels for the rest when you go out taming. That's the only time you really get benefit from 120 taming

As for vet and lore, well they raise relatively easily to 120, so I think they're worth training as high as you can afford. They're skills you'll use all the time in a hunt situation, and it's lovely to resurrect first time, every time. You don't have to have them at 120, but I do miss them on my younger cramped templates
