So I'm at 100.1 ... what next

Last night I broke 100 fishing .... I'm currently at 100.1 and fishing as I type.

Can someone tell me what, if any gain there is, for me to keep fishing until 105?

What does GM and above actually buy me? What can I get or do at 105 that I can't do at 100?

Better chance at the rare fish... 105 will give you the ability to dungeon fish after the next publish (currently the dungeon fish require 106).
