How do you train their poison to 100? Or do you just look for one with 100 already?
And are their hit points halved when tamed? So it'd be like 25ish... or would it stay 50+?

You train poison by letting them fight and use it. It will go up naturally.
Scorpions don't get HP halved. Only a few critters suffer from that. You want to pick a scorpion with as high of HP as possible, and as low of Str as possible to get the most HP on it. They only gain HP when the Str goes up.
