On my peace tamers, I rarely go higher than 105 vet. I've got one though that goes to 110, but only because she's on Oceania and I figured it might help a bit to overcome lag delays. I wouldn't mind taking the vet to 110 on these characters for the additional stable slot, but it just doesn't fit.
On my faction tamers with tracking, detect, hiding, and stealing, I usually lock vet somewhere between 85 and 90. When the pets are dead, the tamer's usually dead too and in skill loss, so rezzing them usually gets delayed until the tamer's out of skill loss and restocked, etc.
On my mage tamers, I generally take vet as high as I can get scrolls for. But as pointed out earlier, 115 vet doesn't give you any more stable slots than 110 does, so either go to 120 or stick with 110 and put the extra 5 points in something else.
Like Kaio, I use both vet and magery to keep the pets alive. Slap on a bandage and cast greater heal; repeat; repeat; repeat.
