does anyone know how to or if theres a way to copy a player written book into an unused book w/o retyping the entire story?

Use the Inscription skill. You have to actually drag the icon from the skills bar. Double click the icon and it will bring up a targeting cursor. Target the book you want to copy, then target a blank book you want to copy it to.

If you use the skill inscription (actually use it, via clicking the bubble in the skill menu), follow the instructions in the lower left corner (system text).

Afterwards you may want to seal the book with a red leaf, to prevent accidental editing of the text.
