Depends. If you toss non-med armor on a human who was benefiting from JOAT med it will be a little bit slower. non-med armor negates meditation skill though there is a rumor that studded armor negates less than metal armor but I am not sure this is confirmed.
If you have medable or non-medable armor on an elf or gargoyle who has no med there is no difference.

I can only recommend that if your character has no medidation skill, remove mage armor from your pieces or make armor from plate and dragon armor.
I have a tamer with no meditation skill. She only has magery for gating. I removed her leather armor and build a suit in a combination of Dragon,Plate and Ring armor. I using refinements to give it all 75 resist. And i'm very happy with the results. Now when she gets hit , all her dex is not gone and she still be able to run. Helps for taming big things too .

Heya Majesto, on this page the formulae are explained and you can tinker with the calculator to see the difference between wearing non-meddable and medable armor.

As you can see, non-medable armor doesn't seem to directly affect mana gain from the Mana Regeneration property by itself, but it does affect your overall mana gain.
