I've seen some RP groups 
I know Catskills has at least two or three RP guild around. I'll have to snoop and see what names I come up with

For RP and general fun...
Kingdom of Everthorn (KE)
Solowhatever Syndicate (S^S)
Freehold of Roses (Rose)
United Pirates (UP)
Purple Guardians of Honor (PGoH)
And I suppose you may run into the Undead or the Soldats during your travels.
Which one you choose depends on exactly how strict you want your role playing to be, how experienced with roleplay you are and what your idea of fun is.
A good place to start is Aegis (Kingdom of Everthorn), which is directly south of the Moongate in Yew on the Trammel side. The joint isn't hopping the way it once was, so you may have to try a few different prime-times before you actually find people there.
Another good place to start is the other side of the law, the United Pirates. Our page is http://www.aschulze.net/ultima/pirates/
Those are the two guilds I see the most of, but I play in the off-hours most of the time. So maybe someone who plays prime time will see things in a different light.

Well...the guild I'm currently in doesn't do much in the way of role play. But I certainly ham it up. I love role playing my character. So, if you ever do see me in town I'm sure you'll hear me dropping a few Thes and Thous and Dousts.
****As Hagrid quickly downs the ale he asks Milo "Where is that cute sister of yours?" Milo smiles back and nods to the back door. As Hagrid walks outside he sees Brenda tending to the stabled animals, and notices Barret carrying in a large wedge of cheese. "Hagrid! Old friend, come in and share a pint with that usless brother of mine...speaking of which is Milo even at the bar, or is he passed out again under a table?" Hagrid shakes his head smiles and opens the door for Barret. "So, Hagrid, what brings the' along, just a friendly visit? Or are you here to collect thy drinking bet from Casey?"
Hagrid rubs his beard and lowers his eyes "Thou hast not heard the news my friend? Amidst the distraction of the waring factions the growing legion of minotaurs is building its strength under everyone's very nose...I fear it only a matter of time before their leader Meraktus orders an attack on Umbra, or even Luna."
Barret's eyes widen. Setting the large cheese wedge down he opens a bottle of cider "Well Hagrid, doust the' have a plan yet?"
Hagrid, starring out of a nearby window, responds "Yes, I just hope they come."****

The simple answer is Yes, there is still some RP to be had. On mondays head into Aegis just south of the Yew moongate. The Knight's Rest Tavern is open there starting at 9 pm est. Wednesdays you can find folks gathering at Ques outside of Skara. And on Sunday's the Garden Lounge in Everthorne just south of Aegis is open. There are ongoing plotlines and things in the planninng. And always room for one more in the mix.
Walking through any of those areas you should run into some roleplayers that can help you find exactly the sort of interaction you are looking for. From Elves to Fae, Undead and Vampires (though we may not admit to knowing any of the kindred) to Humans. The good the bad and the ugly Catskills RP community may be smaller, but all of the heart is still there. Looking forward to meeting you in your travels.

Welp looking to get into some RP after the first of the year here and was wondering is there like an RP community website/ring that someone can go to to find out more about the RP guilds on Catskills?

Many guilds hath come and gone, but it is the individuals that make those guilds. They define them and make them last.
A great turning point has began to reshape the face of Catskills. However, none shall see this change, it will effect each and every one of us. For better or worse we fallow the beat of progress.
My advice to anyone seeking friends is plain, Learn everything you can and become strong, those who benefit from your virtuous actions of Truth, Love, and Courage will wish to be your friends.
But of course if you want to RP a jerk just make people laugh.
