Is there any point in me taking taming above 105?

Say I have base 105 taming, 100 lore, with my talisman that gives +5 taming +5 lore I have 110 taming and 105 lore. This gives me pretty much 99% control chance over anything. If I am going to tame stuff like Cu sidhes I can equip a ring with + taming to hit my cap.

Is there really any point in me taking taming/animal lore any higher? I can't see the benefit in it, if i have 99% control chance anyway, what exactly do I gain from higher taming when i'm not actively taming new creatures?

If the extra skillpoints above those levels don't mean anything then I could really use them elsewhere.

Even at 120 lore and tamingf you won't succeed all your control attempts. The main reason to take taming to 120 is for additional control. +skill jewlery doesn't give you as good of pet control as 120 real skill does.

You also get more stable slots with higher taming skill levels, but you can get the additional stable slots by using +skill jewlery.

According to the taming calculator I have a 99% chance to control a Cu sidhe with 110 taming and 105 lore, is that not correct?

You also get to feel good about yourself because your Title will say Elder/Legendry Tamer, instead of Grandmaster

Higher taming skill will give you a pretty title, more stable slots and make it easier to actually tame creatures. Oh, and maybe control over the firesteed?
If none of those take your fancy then the answer is: No, there's no point in taking taming beyond 105. Personally I soulstoned off my legendary taming and re-trained up to 105 to put those 15 skillpoints to better use.

Wether you have 120 natural, or 120 jeweled skill, your control chance is the -same-.

Beyond those little tidbits, going above GM, or any level skill actually, is going to be related to, bragging rights, and usability.
If you don't care what your real skill is, or what level your skill is, then it's usability all the way.

I dropped my GM taming to 90 when I got a good 1/3 ring with taming.
I run 115 modified taming, and 110 real lore.

You will need a high taming cap for the new super dragons.
