Unless I'm mistaken, any animal form can be used while stealthed. If you mean one which boosts stealth, I think that is rat form. There are also forms such as llama form which can boost your walking speed while stealthed

with llama ostard wolf bake unicorn and Kirin, your speed is increased, but i do not know of a form that lets you "Run".

You can usually run a couple of tiles before you come out of stealth but I guess that is not what you meant.

Ostard lets you move at mounted speed, so when you walk its basically the same speed as unmounted running.

This ^^ If the animal form increases movement speed it is basically the equivalent of running on foot or walking on a mount.

Running just uses double the "stealth steps" that your skill gives you. You dont auto reveal if you dont run too far.
