Question about imbuing... can you remove properties from weapons, jewls ect...

Example... I have a weapon that I do not want Hit Lower Defense on, can I remove that property and add something different?

No.

Though you can reduce the property to the lowest %age, but only if the item isnt crafter with coloured materials(or enhanced) and it does not have 5 properties already.
