I have to ask how many Thiefs gained thier skills stealing ONLY from players?

Technically, I did.

Snooping and Stealing I trained to 75 each on guild mates (back in them olden days), then I GM'ed both running around fel thieving.

Why?

First of all, it's thieves.

Second, I trained about the way, I had two accounts though so I just used a guilded character as the pack-mule.

if I am understanding you correctly, you ate asking how much skill did we gain based off steals? As opposed to just training?

My char is roughly 10-11 years old; I gained my skill just from stealing from people but it was slot different way back when.
