Gaining stats on a skill maxxed out character

Just turn the skill up that helps you gain. If you are maxed skill you don't have to gain in it, just have it turned up.

Yep, it works... thought it feels a little slower than just soul stoning a skill off and retraining lower skills.

Really? I've done it both ways and it seems faster to me than the soul stoning wash and repeat way. Hmm. :)

The fastest way I've found is to stone off one skill. Lock all your skills, except one skill starting at zero that you will use to train up your stats. Pick a skill that has the primary stat gain you are interested in (such as Blacksmithing or Lumberjacking for Strength gains). Train this skill up to 20 or 25, and then turn this skill down. Next train up another skill starting from zero to 25 that also has a primary stat gain in Strength. Just keep switching skills until you get the final stat you want. Then turn all these useless skills down and use the soul stone to put your fully trained skill back on.

Your skill gain/stat checks happen every time that you use the skill at this level, and you gain stats very fast.

Here is a good list for primary stat gains by skill.

The fastest way I found out is to keep your maxed out skill pointing up - and keep training it, the stats fly up.

What I did (and in retrospect I think some of you were trying to tell me to do this, but I somehow misinterpreted you!) was point up a couple of the skills I already had that were associated with the stat I needed, then did what I normally do.

I gained the needed points in under half an hour.

I thought some of you were trying to tell me to use a skill I didn't have, to use it from zero. But I think you were actually telling me to do what I ended up doing.
