Actually played years ago, but never really worked with a mage. Playing one now and having a blast, but I must be extremely dense. I have my spellbook full of spells for first through fourth circle. But where does one get 5th through 8th cicle spells?

5 through 7 can be gotten from higher end monsters, level 8 can only be written by gm scribes. The easiest way to get the spells is to look for a full spell book on sale on a player vendor on whichever shard you play. Some shard boards have lists of player shops sticked at the top, or a request on the shard board for help will usually get a positive response.

You can actually get level 8 scrolls from some monsters, I can only think of The Dark Father at the moment, but its been awhile since I paid attention to this, and they are not really viable at a low stage in the game.

Yes there aren't many monsters who drop 8th circle, DF has been mentioned then Meer Eternal & Tentacles of the Harrower. Now obviously none of these monsters are easy. (Meer Eternal is the easiest of that lot though)

I'd go with what Petra said and just ask someone to make you up a full spellbook, there's loads of people out there who are more than willing to help.
Tip: Try New Haven first, then Luna if unsuccessful OR just post on your shard's board )

OR even easier buy one ready made from a vendor, they are cheap as chips!!!

Have to agree with Hex. It is rather simple to find new spellbooks (just a commone 64 spell one...that's all of them), on player vendors. If not...I would just run around asking every mage you see. Eventually one of them will be like me and have 100 inscription stoned, or have it on their spell-casting template.
