We are still fixing it, and recently awesome milestones have been reached.
But yes they are coming back. If we did not think we would get the data back, we would of made new ones by now.

They are returning, eventually.
As Garaba implies, part of the reason for the wait on their return is to prevent a lot of redundancy resulting from the forums being restored into ones where the same info has already been reposted in a different form. They'll probably come back all at once - quite likely with some tweaks as to layout (some forums may get merged, due to commonalities - my own two profession forums are likely candidates for merger)
That being said, if anyone wishes to repost still-relevent data for a specific skill (some of the FAQs, etc.), the place to do it is in the Player's Corner forum, which has been functioning as the temporary stand-in for the profession forums since these boards came up. I've already started this process with the professions I moderated on the old boards (Smith & miner), and put up some data for the other crafting skills as well.
I will do my best to make these items either sticky, or more noticable, to the users there.
