I started out as a fencer (might go archery/chivalry). Last time I played this game was about 5 years ago. So I have no clue where to go or what to do to get started. I've just been wacking skeles and zombies to death in new haven but I would like to expand on that, and I'm starting to not get any skill gains.

Are there any new player guides/websites on how to gain skill?

The skill guides on the main UO Stratics site, Ultimate Online Forums, UOGuide, and others... are great places to read up on skills training.
These sites and a lot more are all available in the UO Toolbar.

About gaining I recommend the essays written by other stratic members like this one about archery http://uo.stratics.com/content/professions/archery/archery-overview.shtml
If you name a specific skill you want to gain in, you sure get good responses.
